Simple Roasted Tomato Pepper Soup: Cozy, Creamy and Easy

Creamy Whole30 and Comforting, No Dairy Needed

A bounty from last season at the table

The beauty and bounty of summer doesn’t disappear at the autumnal equinox. It lingers a bit, showering us with delight as it slowly gives way to fall. This soup is a testament to that transition. A transition that helps us slow down and enjoy what we have before rushing into the newness of the next season.

The easy hands off way this soup comes together will be one of the reasons you turn to it again and again. If you want to accompany this soup with crusty bread and a soft cheese you won’t be disappointed. But to make it a filling and delicious meal I suggest a sourdough grilled cheese that you can dip right into the bowl. This soup is a delicious comfort that gently guides you into the cozy season.

Real soup is to the body what peace is to the soul.
